We have a SAM4S ER-2125M and I just successfully re-programmed our PLUs... mostly. I need two of the buttons to have a $0.00 value (free admission with different types of membership). It appears to let me enter a 0 value for the new price on that button, but when I go out of P mode and back into Reg mode and I push the PLU, it tells me I've got a sequence error, so clearly it's not happy. Any insights? I understand you can't necessarily tell me how to do this for free, but it'd be nice to know if it's even *possible* to have a zero value PLU on this model.

Sure, that is an easy fix. You need to program the PLU status to be pre-set (even if the pre-set is 0) It is in the PLU status programming which is the 100 programming. That should do it.
